Berbere, or Bärenärre, is a semi-mild to spicy spice mixture, which is native to the Ethiopian and Eritrean kitchen and plays an important role there. The preparation of the mixture is not subject to a single recipe, but essential ingredients are cayenne pepper, ginger, garlic, coriander and dried cloves.
Try the mix with roasted argan oil as a marinade on leg of lamb. Grilled or gesmoked a treat!
